I extremely miss Chinese food during I stay in America. In blog 5, I’d like to introduce Chinese food. China covers a large territory and has 56 nationalities. Each group has its own culture, history and cuisine features. The most famous are eighth regional cuisines. There are Shandong Cuisine, Sichuan Cuisine, Guangdong Cuisine, Fujian Cuisine, Huaiyang Cuisine, Zhejiang Cuisine, Hunan Cuisine and Anhui Cuisine. 

Shandong province is a popular tourist attraction, which is located in the end of Yellow River and the weather is moderate. So the selection of food is very abundant, especially seafood. People like Shandong not only has mild climate and places, but also has delicious food. The cooks in Shandong are especially skillful with knives. Also, they have variety capable of cooking, such as steaming, boiling, baking, brewing, frying, boiling and so on. The typical menu items are Yellow River Carp in Sweet and Sour Sauce.

Sichuan Cuisine, which is my favorite cuisine. Sichuan province is located in the basin. There are mountains all around. And the weather is very humid. I remembered when I traveled in Sichuan in summer. It rained at least two days a week. So people like eating spicy food in there. Because they sweat when they eat chili peppers. They think using this way can remove moisture from their body. The famous food is hot pot and Mapo Tofu.

Another famous cuisine is Guangdong Cuisine. People living Guangdong like drinking morning tea, which means they drink some tea in the morning and eat some dim sum. It usually lasts from morning till noon. I recommend it very much, because dessert is particularly tasty and special. What impressed me most was that Cantonese people like eating snakes. When I ate with them, they ordered snakes almost everyday. The typical menu items are steamed sea bass and dim sum.

Then I want to introduce Fujian Cuisine. Fujian is a very beautiful province, which includes a popular city Xiamen. Due to geographical advantage, seafood is very rich. If you want taste fresh seafood, Fujian is a good place that you can choose. The food I recommend are Buddha Jumping Over the Wall and Dragon’s Body.

Huaiyang Cuisine also called Jiangsu Cuisine. Jiangsu is located in the middle and lower reaches of Changjiang River. All kinds of fish are famous here. Because of various fishes, cooks can use different way to cook them. And the most famous for is Squirrel with Mandarin Fish.

Then Zhejiang Cuisine is also popular in China. Zhenjiang is a well-known province. A literary giant was born in Zhejiang, who is Luxun. Many people come to visit Luxun’s former residence. It improved economic and food development. Most people recommend Sour West Lake Fish.

Anhui and Hunan food are the seventh and eighth cuisine. They both good at spicy food. They are well-know as Hot Chicken and Stewed Snapper respectively.

Even if there are other local specialties not in the list, but they are still very representative, such as Piking Duck in Beijing, Hot dry Noodles in Wuhan. In conclusion, Chinese food is especially composed of local characteristics. They all have their own features.
